In another thread, onion rings were mentioned. If there are any decent onion rings in Pattaya, I don't know where. I've tried making them at home, but they never come out right.

Onion Rings
2 large sweet onions
2 cups flour
2 cups fine cracker crumbs
2 cups white corn meal (yellow is ok if you don't have white)
2 cups buttermilk
1 cup water
4 cups Crisco
Slice onions 1/2 inch thick (Don't use the very small rings).
In a large bowl add the buttermilk and water.
Mix the flour and cracker meal in another bowl and the corn meal in a third bowl.
Take out onion rings one at a time and coat them with flour mixture, and then the buttermilk mixture and finally with the corn meal.
Heat your oil until a pinch of cornmeal bubbles immediately, but doesn't burn.
Drop rings one by one into the hot oil and fry until golden.
Drain on paper towels and lightly salt them while they are still hot.
