Needing some eggs today. I pulled off the main road in my motor and down a wonky track to the farm I buy my eggs from. Rather like village life in Isarn, it's great to see the hens, ducks and geese wandering around. I have to be careful not to run one over. I usually buy a dozen hens eggs, although sometimes they have duck eggs which I like too. Today I noticed they had some pullet eggs. I'd never come across that type of hen before, so I decided to get a half dozen to try out. They are noticeably smaller than most hens eggs, but still a decent size. I haven't tried one yet, but curiosity got the better of me and I googled 'pullet eggs' and found out, stupid me, a pullet is just a young hen!
I came across an interesting website, where a guy called Moses promotes the benefits of pullet eggs:
"Soufflés will rise higher!"
"Ice cream will be more luscious!"
"Omelets will have a lighter texture!"
Unless anybody can beat me to it, I'll report back on Moses' claims. Well, not the souffle or ice cream, I can't make those, but I know a good omelette when I taste one.
